The Kogane Mochi rice used as the main ingredient is specially cultivated with a 50% reduction in chemical fertilizers and pesticides. The water used is underground water from Tsunan, a renowned source of pure spring water.
The mochi is prepared using the traditional kine (pestle) pounding method, where the pestle naturally falls. Each batch is carefully checked, with skilled artisans assessing the texture and elasticity by touch and sight. The mochi is pounded to preserve its firmness and flavor.
The black beans are carefully blended in to retain their natural aroma, enhancing the overall taste of the mochi.
