Specially cultivated Niigata Prefecture Uonuma “Shimehari” Mochi Rice – “Shiko” Rice cake (square shaped)
Shimehari Mochi Rice has been cultivated in Niigata Prefecture since the Taisho era and was once considered the best variety for making rice dumplings (okowa) and mochi. However, due to its susceptibility to disease and the difficulty in cultivation, it was overtaken by the Kogane mochi rice variety and is now considered a rare, almost “lost” variety.
The rice is grown using a special organic fertilizer and compost as base fertilizers, with a 50% reduction in chemical fertilizers and pesticides. It is carefully cultivated with special attention to sustainability. The water used comes from the renowned underground water in Tsunan, known for its purity.
The mochi is made using traditional hand-pounding methods, with each batch carefully checked by skilled artisans. The texture, stretch, and flavor are all judged by hand, ensuring the right balance of firmness and flavor. The final product is shaped by hand with great care and precision. The resulting Shimehari mochi is characterized by its smooth, soft texture, a strong chew on the last bite, and a rich, authentic flavor—truly a perfect example of traditional mochi.
