Fresh Soba Texture Izushi Soba – 80% Buckwheat
We have recreated the texture of fresh soba by using 80% high-quality, carefully selected buckwheat flour and applying our unique two-stage low-temperature aging process. Additionally, the buckwheat flour used contains a higher amount of the husk, allowing you to enjoy the natural flavour of the soba. ‘Enjoy Soba-Yu!’ After boiling the soba, let the remaining water sit in the pot for about 3 minutes. Discard only the top layer of water, take out the sediment from the bottom of the pot, and mix it with the remaining soba dipping sauce to enjoy as soba-yu (soba broth).
