Shimehari Mochi Rice has been cultivated in Niigata Prefecture since the Taisho era, but due to its susceptibility to disease and very low harvest yield, it was overtaken by the Kogane mochi rice variety and is now considered a rare, almost “lost” variety.
The rice is cultivated without the use of pesticides or chemical fertilizers. Instead, organic fertilizers such as rice bran and compost are applied, and weeds are controlled using a self-developed weeding machine and manual labor. The Tsunan region in Uonuma is known for heavy snowfall (up to 4 meters), with cold winters and hot summers, along with significant temperature differences between day and night—climatic conditions ideal for rice cultivation. In the spring, when the 4 meters of snow melt, the soil undergoes natural purification, which enhances the inherent characteristics of the rice, enriching the flavor of the Shimehari mochi rice.
The mochi is traditionally made by hand using a wooden mallet, with each batch carefully checked by skilled artisans who judge the texture and elasticity by touch and sight. They ensure the right balance of firmness and flavor. The final round-shaped mochi pieces are made by hand, with great care and precision. The resulting Shimehari mochi is characterized by its smooth, soft texture, a strong chew on the last bite, and a rich, authentic flavor—truly an exceptional piece of mochi.
